L'Auberge de l'Aisne
Market cuisine rooted in the Picard terroir — smoked eel, garden salads, orchard-fruit tarts. Short menu, refreshed with the seasons.
Set in a 19th-century former fisherman's house a stone's throw from the Vailly bridge, L'Auberge de l'Aisne has defended a short, legible market cuisine since 1987. Chef Jean-Marc Verdier, trained in Reims, came back to his home village after fifteen years in Burgundy.
The menu
Five starters, five mains, five desserts. Suppliers are local and named on the menu: market gardeners of Œuilly and Pargnan, cheesemaker of Maizy, fisherman of Bourg-et-Comin.
Signatures
Hot-smoked eel, hay-roast beetroot, herbed fresh cheese. Pike-perch fillet from the Aisne, beurre nantais with capers. Soissonnais pigeon, light jus, glazed turnips. Thin apple tart from Vauclair with buttermilk ice cream.
Cellar
Champagnes from small growers of the neighbouring Marne, with a few cuvées from Cumières and Hautvillers. Craft beers from the Laonnois.
Practical
Open Wednesday to Sunday, lunch and dinner. Closed Monday, Tuesday and the first three weeks of January. Weekend reservations advised.
